you will need:

  • 2 cups chopped watermelon
  • 1 red onion, slices
  • handful of mint, chopped
  • ½ cup feta cheese
  • 2 cups salad greens
  • 1 whole seed pad arugula microgreens

 

for the dressing:

  • 3 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • salt & pepper
  • ½ lemon, squeezed
  • 1 tbsp honey

 

preparation:

step one: in a large bowl, combine watermelon, onion, salad greens, mint, feta cheese, and arugula microgreens. 


step two: in a small bowl, mix dressing ingredients. drizzle over salad and serve chilled!
