.For the toast you will need:
- 1 avocado
- 1/2 lemon, juiced
- 4 tbsp cream cheese
- 2 slices rye bread, toasted
- 3oz smoked salmon (or 3oz smoked tofu for vegans)
- 1 handful radish microgreens
- salt, pepper (to taste)
Preparation:
Step one: Combine the avocado flesh and cream cheese in a bowl. Add the lemon juice and mash everything with a fork. Season well with salt and pepper.
Step two: Add the handful of radish microgreens and carefully mix with the avocado cream.
Step three: Spread on toasted bread, add the smoked salmon and sprinkle with a few more fresh radish microgreens. Enjoy!
