for the falafels you will need:

  • ½ cup dried chickpeas
  • ½ cup white cannellini beans 
  • ½ cup parsley
  • ½ cup coriander
  • ½ cup arugula microgreens
  • 1 onion
  • 3 cloves garlic
  • 1 tbsp baking powder
  • 1 tbsp baking soda
  • 2 tbsp breadcrumbs
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp cumin
  • 1 tsp paprika powder
  • Sesame seeds
  • vegetable oil, for frying

 

for the wraps you will need:

 

preparation:

step one: (one day before) place the dried chickpeas into a bowl of water and soak overnight. 

step two: add the chickpeas, beans, parsley, coriander, microgreens, onion, garlic, breadcrumbs, and seasonings to a food processor. mix until well combined.

step three: refrigerate mix for up to one hour or until ready to cook. 

step four: add the baking powder and baking soda and form your mixture into small round patties.

step five: cover the patties with sesame seeds and proceed with baking or frying over medium heat until crispy and brown

step six: assemble the falafels on the tortilla and serve with tahini dressing, sliced tomatoes, onions, arugula, and some more microgreens!
