You will need:

1 large eggplants, sliced

1 cup tomato sauce

1 cup shredded vegan mozzarella cheese

1 tsp oregano

Salt & pepper

1 tsp honey
Preparation:
- Slice the eggplant into ¾ inch thick slices. Brush both sides with olive oil and sprinkle with salt. Set aside for 10 minutes. Remove excess water using a paper towel.
- In a medium sized pot, add tomato sauce, oregano, honey, salt and pepper. Stir over medium heat for 5 minutes.
- Top each slice with shredded mozzarella cheese and bake in the oven for 15 minutes.
