you will need:
.for the salad:
- 75 g fusilli pasta
- 1/2 cup broccoli florets
- 1/4 cup tomatoes, chopped
- 1/4 cup cucumber, chopped
- 1/4 cup red onion, chopped
- 1/8 cup black olives
- one whole seed pad red cabbage microgreens or broccoli microgreens
for the dressing:
- 1/2 cup plain greek yogurt
- 2 cloves garlic, minced
- 3-4 tbsp lemon juice
- 3 tbsp olive oil
- salt & pepper
preparation:
step one: cook your fusilli pasta according to package instructions. let cool on the side.
step two: chop and remove the stem of the broccoli into broccoli florets. add the chopped broccoli, tomatoes, cucumber, onion, black olives, and red cabbage microgreens
