6 servings, 20 minutes

You will need:

  • 6 large eggs

  • Pinch of cinnamon or vanilla extract

  • 2 tbsp minced onion

  • ¼ cup tomato, diced

  • ¼ cup fresh spinach leaves

  • Two whole seed pads ingarden microgreens (kale & radish)

  • Salt & pepper, to taste

 

Preparation:

  1. Preheat oven to 350°F.
  2. In a large mixing bowl, whisk your eggs together until consistent. Add a pinch of cinnamon or vanilla extract. 
  3. Add the chopped spinach leaves, tomatoes, onions, and ingarden microgreens. Season with salt and pepper. 
  4. Divide the mixture into muffin cups and bake for 15-20 minutes. Enjoy!
