4-6 servings, 30 minutes
Ingredients
- 2 pounds orange fleshed sweet potatoes (about 3 large)
- 3 tablespoons extra virgin olive oil
- 1 1/2 teaspoons kosher salt
- 1 to 2 tablespoons spice or spice combination of your choice: chipotle powder, smoked paprika, Chinese five-spice, pumpkin pie spice, garam masala, Cajun seasoning, etc.
- Half a Pad Radish Microgreens
Instructions
-
Preheat the oven:
For a crispier texture, set your oven to 500°F. Otherwise, preheat to 450°F. Place a roasting pan or heavy-duty baking sheet that can withstand high heat into the oven to preheat. -
Prepare the sweet potatoes:
Peel the sweet potatoes and trim off the ends. Slice each potato in half lengthwise, then cut crosswise if they're particularly long. From these pieces, cut into wedges 1/4 to 1/2 inch thick. Alternatively, use a mandoline or a sharp knife to slice them into disks. -
Season the sweet potatoes:
Transfer the sweet potatoes to a large bowl. Drizzle with oil and toss until evenly coated. Sprinkle with salt and your favorite spices. Mix thoroughly with your hands to ensure every piece is coated. -
Arrange on the preheated pan:
Carefully remove the hot baking sheet from the oven. Spread the seasoned sweet potatoes in a single layer on the pan, ensuring even spacing. Be cautious—the pan will be very hot! -
Bake the sweet potatoes:
Bake for 15 to 25 minutes, adjusting based on oven temperature and wedge size. At the 10-minute mark, remove the pan and use tongs to flip the sweet potato pieces. Return to the oven and continue baking for another 5 to 15 minutes, until the wedges are well browned. For extra crispiness, let them get darker—but monitor closely to avoid burning. -
Cool and serve:
Allow the sweet potato fries to cool for 5 minutes before serving. The caramelized natural sugars will enhance their flavor, even if they appear quite dark.
Enjoy your crispy sweet potato fries!
