Ingredients: 
  • 1 sweet potato

  • 1 ripe avocado

  • ¼ cup crushed walnuts

  • 2 tbsp lemon juice

  • Salt & pepper

  • Chili flakes

  • 1 pad kale microgreens

Preparation
  1. Cut your sweet potato into equal sized slices, lengthwise. Bake for 15 minutes.
  2. Cut your avocado in half. Slice one half into very thin slices. Mash the other half. Season with lemon juice, salt & pepper.
  3. Assemble the avocado onto the sweet potato slices. Serve with fresh kale microgreens, crushed walnuts, and chili flakes.
