Pizza is one of the most popular foods in the world, loved by people of all ages. However, it's not always the healthiest option, especially when it comes to the bite-sized versions we all know and love. That's why I'm excited to share my latest creation with you: Quinoa Pizza Bites! This recipe is not only delicious but also packed with protein and nutrients from the quinoa, making it a guilt-free snack option that you can enjoy anytime, anywhere. Whether you're hosting a party or simply looking for a fun and healthy snack, these pizza bites are sure to impress. So, let's dive into the recipe and get cooking!

12 bites, 30 minutes 

.you will need: 

  • 1 cup multicolored quinoa
  • 1 tomato, diced
  • 1 egg
  • ½ cup mozzarella cheese
  • 2 whole seed pads ingarden mustard microgreens, chopped
  • 2 tbsp tomato paste
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • salt & pepper, to taste

preparation:

step one: preheat the oven to 400°F and grease a 12 mini muffin tin pan or line it with cupcake liners.

step two: cook quinoa according to package instructions. let rest on the side.

step three: in a large mixing bowl, add the quinoa, diced tomato, chopped mustard microgreens, egg, mozzarella cheese, tomato pasta, olive oil, garlic powder, salt and pepper. mix well.

step four: scoop out the mixture into a cupcake pan and bake in the oven for 12-15 minutes

step five: add some more mozzarella cheese on the quinoa bites and bake for another 3 minutes, or until cheese is golden.

step six: serve with some more microgreens, marinara sauce, and enjoy!
