time: 20 minutes | serving size: 1

you will need: 

  • 1/2 cup carrots
  • 1 tbsp honey 
  • 1 avocado
  • 1 onion, sliced
  • 2 cups mix leafy greens
  • 1/2 cup quinoa
  • 1/4 cup cashew nuts, crushed
  • one whole seed pad radish microgreens
  • balsamic vinaigrette 

 

preparation: 

step one: glaze carrots with honey and roast in the oven at 350 for 20 minutes. 

step two: while carrots are roasting, prep quinoa according to package directions. 

step three: cut up onion, avocado and cashews. 

step four: take carrots out of the oven and allow to cool 

step five: combine ingredients into large bowl, adding dressing, then mix and enjoy!
