veggie chips with microgreen hummus dip by ingarden

2 portions, 30 minutes

you will need:

1 sweet potato

1 beetroot

1 zucchini

1 eggplant

3 tbsp olive oil

salt, freshly ground pepper

1 tbsp paprika

1 tbsp cumin

1 tbsp oregano

1 tbsp honey

hummus dip

a handful of microgreens (we used arugula which can be found in our energy booster eco pack)

 

preparation:

step one: preheat the oven to 395 degrees fahrenheit, and prepare your tray with a sheet of baking paper

step two: start by washing, peeling, and slicing your vegetable very thinly 

step three: marinate the chips with olive oil, salt, pepper, paprika, cumin, oregano, and honey. Mix until all vegetable pieces have been covered

step four: spread the chips on the tray and bake for 30 minutes

step five: serve with hummus dip and microgreens!
