vegan burrito bowl

vegan burrito bowl
1 serving, 30 minutes

 

you will need: 

1 cup brown basmati rice

1 cup sweet corn, drained & rinsed

1 cup black beans, drained & rinsed

1 red onion, chopped

1 cup cherry tomatoes

½ cup parsley

½ cup crushed tortilla chips

one whole seed pad radish microgreens

 

for the sauce:

½ cup parsley

½ cup cilantro

2 cloves garlic

2 tbsp olive oil

1 lemon, juiced

salt & pepper 

preparation:

step one: cook your rice according to packet instructions. set aside to cool down. 


step two: prepare your bowl sauce by adding all ingredients to a blender. 


step three: assemble your bowl by adding the rice, sweet corn, black beans, onion, cherry tomatoes, parsley, crushed tortilla chips, and radish microgreens. 


step four: drizzle with your creamy green sauce and serve with tortilla chips
