Enjoy creamy avocado-microgreens spread and delicious smoked salmon—divine!

For the toast you will need:
1 avocado
1/2 lemon, juiced
4 tbsp cream cheese
2 slices rye bread, toasted
3oz smoked salmon (or 3oz smoked tofu for vegans)
1 handful broccoli microgreens
salt, pepper (to taste)
Preparation:
Step one: Combine the avocado flesh and cream cheese in a bowl. Add the lemon juice and mash everything with a fork. Season well with salt and pepper.
Step two: Add the handful of broccoli microgreens and carefully mix with the avocado cream.
Step three: Spread on toasted bread, add the smoked salmon and sprinkle with a few more fresh broccoli microgreens. Enjoy!
