quinoa pizza bites

quinoa pizza bites
12 bites, 30 minutes

you will need: 

1 cup multicolored quinoa
1 tomato, diced
1 egg
½ cup mozzarella cheese
2 whole seed pads ingarden mustard microgreens, chopped
2 tbsp tomato paste
1 tbsp olive oil
1 tsp garlic powder
salt & pepper, to taste

preparation:

step one: preheat the oven to 400°F and grease a 12 mini muffin tin pan or line it with cupcake liners.

step two: cook quinoa according to package instructions. let rest on the side.

step three: in a large mixing bowl, add the quinoa, diced tomato, chopped microgreens, egg, mozzarella cheese, tomato pasta, olive oil, garlic powder, salt and pepper. mix well.

step four: scoop out the mixture into a cupcake pan and bake in the oven for 12-15 minutes

step five: add some more mozzarella cheese on the quinoa bites and bake for another 3 minutes, or until cheese is golden.

step six: serve with some more microgreens, marinara sauce, and enjoy!
