microgreen summer salad

this stunning salad boasting just the right amount of textural crunch is sure to make your mouth water. 

1-2 people, 10 minutes


for the salad you will need:

3 cups of red cabbage microgreens
1 cup nut mix
1/2 tsp olive oil
sunflower seeds, pumpkin seeds
1 tbsp fresh lemon juice
salt, freshly ground black pepper (to taste)


step one: mix all ingredients together in a bowl. your preferred amount of nuts can be ground to textural preference. 

step two: serve as a side dish or as a full meal with extra nuts, tempeh or bread. enjoy!
