microgreen lentil salad by ingarden

4 portions, 20 minutes

for the base you will need:

1 cup lentils

1 large tomato, chopped

1 large cucumber, chopped

1 cup parsley

½ cup coriander

½ cup orange, chopped

½ cup onion, chopped

¼ cup black olives

½ cup kale microgreens

 

for the dressing you will need:

3 tbsp tahini

1 tbsp honey

1 tbsp vinegar

1 tbsp olive oil

1 lemon, squeezed

1 tsp salt

½ tsp pepper

1 tsp cumin

1 tsp zaatar (or oregano)

 

preparation:

step one: cook the lentils in boiling water for 15-20 mins. Drain and leave on the side to cool.

step two: in a large bowl, toss and mix all salad ingredients together

step three: in a small bowl, whisk the ingredients for the dressing until consistent.  

step four: before serving, drizzle dressing over salad and continue to toss until combined.
