Lemony Pasta Recipe from ingarden

For the pasta you need:

1/2 pack spaghetti
1/4 cup butter (or substitute with 1/4 cup vegan butter)
2 garlic cloves
Zest of 1 lemon
Splash of lemon juice
1/2 cup vegetable broth
Handful of basil
Arugula microgreens
Other microgreens of your choice


Step one: To start this delicious lemony pasta recipe, first cook spaghetti in a large pot of salted boiling water. Meanwhile, heat oil and butter over medium-low heat.

Step two: Stir fry the garlic, lemon peel, a splash of lemon juice, 100ml of vegetable broth, basil, salt, and pepper and raise heat to medium-high. Bring to a gentle simmer, reduce heat, and simmer for 3 minutes. Drain your pasta and return it to its cooking pot.

Step three: Pour the heated sauce over the pasta, along with a handful of arugula and your selection of microgreens. Our tip: use slightly sweet microgreens such as red cabbage and they will wonderfully complement the slight spiciness of the arugula. Use tongs to gently toss the pasta and sauce together.

Step four: Top the pasta with some parmigiano, a sprinkler of sea salt and freshly ground pepper, and a splash of lemon juice. Here you go! Enjoy our lemony pasta recipe.
