cucumber rolls

2 servings, 10 minutes 


you will need: 

1 large cucumber

1 large carrot

1 large red bell pepper

½ cup microgreens (we used broccoli

½ cup cream cheese

sesame seeds

½ cup soy sauce



step one: use a vegetable peeler to slice the cucumber into thin slices. once you reach the middle of the cucumber, flip around and start to peel again on the other side. 

step two: cut the bell pepper and carrot into thin sticks. 

step three: lay your cucumber slices side by side on a board and pat dry with paper towels. 

step four: spread the cream over the cucumber slices and align the chopped vegetables and microgreens on one side of the cucumber slices.

step five: starting from one side, tightly roll the cucumber slices into a spiral.

step six: serve with sesame seeds and soy sauce.
