1 portion, 15 minutes
You will need:
1 1/4 cups of soaked cashew nuts
1/2 c water
1/2 tsp salt
1 pinch of pepper
1/2 a lemon, juiced
2 tbsp yeast flakes
2 tbsp soy sauce
1/2 cucumber
handfull of microgreens of your choosing (we used broccoli and red cabbage)
Preparation:
step one: let the cashews soak overnight
step two: drain the water from the nuts
step three: grate cucumber into fine pieces
step four: combine all ingredients, except the microgreens, into a blender and mix until creamy.
step five: fold in microgreens into the dip and enjoy with your favorite veggies or chips!
