4 portions, 25 minutes
for tahini dressing you will need:
2 cloves of garlic
1/3 c lemon juice
6 tbsp water
2/3 c tahini (sesame butter)
1 tsp miso paste
1/4 tsp salt
1 pinch of chili

for broccoli salad you will need:
1 1/2 tbsp sesame seeds
4 c of broccoli
4 c of cauliflower
2 tsp salt
2 tbsp mint
1 tbsp parsley
1 cup of micorgreens (we used broccoli)
1 grapefruit
1 pinch of chili

preparation for dressing:
step one: put garlic cloves through a garlic press or chop very small with a knife.
step two: squeeze lemon juice over the garlic, then let sit for 10 minutes.
step three: pour water into separate bowl and place to the side.
step four: place the tahini, miso, salt, chili and the garlic lemon combination in a bowl and whisk well, while slowly adding water to the mixture until desired consistency is achieved.

preparation for broccoli salad:
step one: roast the sesame seeds in a pan without any oil, then put them to the side.
step two: cut broccoli and cauliflower into very small, fine pieces, and place into a bowl.
step three: toss broccoli and cauliflower with salt until coated.
step four: chop the mint, parsley, and grapefruit into small pieces.
step five: combine the vegetables, herbs, microgreens and herbs into a large salad bowl and mix well.
step six: top with tahini dressing and a pinch of chili to serve and enjoy!
