1 portion, 15 minutes
for the bowl you will need:
3-4 tbsp microgreens we used mustard, radish and red cabbage
1 cup cooked black rice
1/2 avocado
1-2 heads of bok choy
1/2 a coconut
2-3 tbsp physalis berries
1 cup cucumber
handful of baby spinach
for the dip you will need:
1-2 tbsp honey (use agave syrup or maple syrup as a vegan substitute)
1/2 avocado
1 clove garlic
1 tsp of chili
2-3 tbsp rice vinegar
1 tbsp sesame oil
1-2 tbsp water to dilute
preparation:
Step one: finely puree the ingredients for the dip with a blender and add to the bowl base of other ingredients.
Step two: enjoy this super healthy bowl with mustard, radish and red cabbage microgreens!
