you will need:
- 1 cup brown basmati rice
- 1 cup sweet corn, drained & rinsed
- 1 cup black beans, drained & rinsed
- 1 red onion, chopped
- 1 cup cherry tomatoes
- ½ cup parsley
- ½ cup crushed tortilla chips
- one whole seed pad radish microgreens
for the sauce:
- ½ cup parsley
- ½ cup cilantro
- 2 cloves garlic
- 2 tbsp olive oil
- 1 lemon, juiced
- salt & pepper
preparation:
