I'm excited to share with you my latest recipe for a breakfast dish that's both delicious and healthy. We all know that breakfast is the most important meal of the day, and what better way to start your morning than with a stack of fluffy, nutrient-packed pancakes? In this recipe, I've used a variety of superfoods to create a breakfast dish that's not only tasty, but also nourishing and energizing. From chia seeds and hemp hearts to blueberries and banana, these pancakes are packed with all the nutrients you need to fuel your day.
12 pancakes, 30 minutes
you will need:
- 1 ½ cup oat flour
- 2 tbsp honey
- 3 tbsp baking powder
- 3 tbsp vegetable oil
- A pinch of salt
- 1 cup milk
- 1 cup spinach, chopped
- 1 whole seed pad microgreens (we used our organic broccoli superfood microgreens)
- ½ teaspoon vanilla extract
preparation:
step one: in a mixing bowl, combine the flour, baking powder, and salt and mix until well blended. add the milk, honey, vegetable oil, vanilla extract, spinach, and microgreens and mix with an electronic mixture until the batter Is smooth, without any lumps.
step two: heat a pan over medium heat and grease with a bit of oil. Pour about ¼ cup of batter to form a pancake.
step three: cook until a few holes appear on each pancake, about 2-3 minutes. flip to the other side and continue to cook for an additional 2 minutes.
step four: using a spatula, transfer the pancakes to a plate. Serve with maple syrup and some more microgreens.
