2 portions, 15 minutes

you will need:

  • ½ cucumber
  • ½ zucchini
  • 5 cups of baby spinach
  • ½ organic lime slice
  • ½ garlic clove
  • ½ avocado
  • salt and pepper
  • a handful of microgreens (we used arugula)

 

preparation:

Step one: Wash cucumber and zucchini. cut into vegetable noodles with a spiralizer.

Step two: Wash the baby spinach and deseed and peel the avocado.

Step three: Place the spinach, lime, garlic clove, avocado and microgreens in a blender. mix to a creamy dressing. season with salt and pepper.
