You will need:

1 can of chickpeas
- 2 tablespoons tahini
- 1 red onion, chopped
- ½ can of sweet corn kernels
- 2 lemons, juiced
- Salt & pepper to taste
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
- 1 tablespoon vegan mayonnaise
- One whole seed pad ingarden mustard microgreens
Preparation:
- Rinse your chickpeas and add to a large mixing bowl. Add two tablespoons of tahini and mash well.
- Add your red onion, sweet corn, and mustard microgreens. Mix well.
- Season with the vegan mayonnaise, lemon juice, garlic powder, olive oil, and salt & pepper to taste.
- Serve in a lettuce wrap or your favorite toast!
