2 servings, 10 minutes

You will need:

  • 1 can of chickpeas

  • 2 tablespoons tahini
  • 1 red onion, chopped
  • ½ can of sweet corn kernels
  • 2 lemons, juiced
  • Salt & pepper to taste
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 tablespoon vegan mayonnaise 
  • One whole seed pad ingarden mustard microgreens

    Preparation:

    1. Rinse your chickpeas and add to a large mixing bowl. Add two tablespoons of tahini and mash well. 
    2. Add your red onion, sweet corn, and mustard microgreens. Mix well. 
    3. Season with the vegan mayonnaise, lemon juice, garlic powder, olive oil, and salt & pepper to taste. 
    4. Serve in a lettuce wrap or your favorite toast!
