Today, we're excited to share with you our recipe for a mouth-watering avocado halloumi salad that's perfect for a light lunch or dinner. This salad combines the creamy texture of avocado with the salty goodness of halloumi cheese, along with a variety of fresh vegetables and a zesty dressing to tie it all together. Not only is it a feast for the taste buds, but it's also packed with nutrients to keep you feeling energized and satisfied. So, grab your fork and let's dig in to this delicious salad!

Ingredients:

  • 1 cup red grapes

  • 1 ripe avocado

  • 2 cups mixed lettuce

  • 1 cup rocket leaves

  • ¼ cup walnuts

  • ¼ cup chia seeds

  • 125 g halloumi cheese 

  • one whole seed pad ingarden mustard superfoods

  • balsamic dressing

 

instructions: 

step one: heat a pan over a high heat. drizzle the halloumi slices with a tbsp oil and add to the pan. cook for 2 mins each side or until golden.

step two: prepare the remaining ingredients. Halve your avocado and cut into thin slices. cut your grapes in half. wash and drain your mixed lettuce and rocket leaves. 

step three: add all ingredients to a large salad bowl and drizzle with a balsamic vinaigrette dressing. 

step four: top with ingarden superfoods and mix well. Enjoy!
