for the bowl you will need:
- 3-4 tbsp microgreens we used mustard, radish and red cabbage, but garlic chive microgreens work well too
- 1 cup cooked black rice
- 1/2 avocado
- 1-2 heads of bok choy
- 1/2 a coconut
- 2-3 tbsp physalis berries
- 1 cup cucumber
- handful of baby spinach
for the dip you will need:
- 1-2 tbsp honey (use agave syrup or maple syrup as a vegan substitute)
- 1/2 avocado
- 1 clove garlic
- 1 tsp of chili
- 2-3 tbsp rice vinegar
- 1 tbsp sesame oil
- 1-2 tbsp water to dilute
preparation:
